Another Recipe?!

Apparently I only update this when I bake something...hmmmm

Well, today is Memorial Day! Yay! To ring this holiday in, we had fleet week in NYC prior to this Monday Holiday - so many sailors, such fun! Plus, to cap off that great experience, we saw a sailor in the middle of times square propose to his girl, and then kiss her like this:

Well, since it is a holiday, my friends and I will be celebrating in style at Riverside Park on the Hudson River, having a picnic, and playing games, and just hanging out!

Since it's a picnic, I decided to make Snickerdoodle cookies. So delish! But seeing as how we never have the ingredients I need, I've taken to substituting a lot of items over time...in fact, I've become quite adept at it! So, here is the snickerdoodle recipe with a few changes - Bon Appetit!!

SnickerDoodles

1 cup Butter, softened
1 1/2 cups White Sugar
2 Eggs
2 teaspoons Maple Syrup
2 3/4 cups AP Flour
2 teaspoons Lemon Juice
1 teaspoon Baking Soda
1/4 teaspoon Salt

2 tablespoons White Sugar
2 tablespoons Ground Cinnamon

*Normally, this recipe calls for Vanilla, but of course, we don't have that, so I substituted Maple Syrup, and you CAN NOT tell the difference! Yum!


*Also, it usually calls for Cream of Tartar, but again, who has that on hand? Instead I used Lemon Juice, since it is needed for the acidity!

Combine butter, sugar, eggs, maple syrup until a creamy texture is achieved. Add all other ingredients (flour, lemon juice baking soda, salt). Mix until fully blended.

Mix on a plate the 2 tablespoons of sugar and cinnamon. Take the cookie mixture and form little balls, roll those in the cinnamon sugar mixture, fully coat them. Place them on a cookie sheet. Cook at 400 Degrees for 8-10 minutes and VOILA!

Super Super easy, and so delicious!!!
